Twenty years ago, when I was in culinary school, the focus on the farm to table movement began. That movement has grown and today the industry is moving it’s focus to “Fighting Food Waste with Food Rescue”. Society wastes a lot of food and we need to change that. The only thing that should be thrown out in a kitchen is the egg shells, even those can be composted. Not only restaurants, but grocery stores have taken on the challenge also.
